Vinification: Already in the vineyard in the spring, by selecting the best buds, and then in the summer, by heavily thinning the bunches, the yield of the vines is reduced to maximize the quality of the future wine. At the end of October, the grapes are then harvested strictly by hand and once they arrive in the cellar they are destemmed and macerated on the skins for about twenty days. At this point, they are racked and gently pressed. The wine obtained rests for about a month in stainless steel tanks in order to carry out malolactic fermentation. Immediately afterwards, they are transferred to French oak barrels for about 4 years of aging.
Once bottled, the wine remains to refine in the bottle for at least two years before being marketed.
Description: Cabernet Franc is a red grape variety capable of producing wines of great elegance and longevity, with clean and easily recognizable characteristics and a wide and round taste. Vinified in purity, Cabernet Franc produces a wine with a bright ruby red color, which tends to garnet with evolution over the years. The aromatic notes are: strawberries, blueberries, raspberries and currants mixed with traces of smoke, humus and violet, with a always present herbaceous background.
Temperature & recommandation: A soft Cabernet Franc with a pleasant drinkability but also rich and full-bodied with a caressing tannin on the palate. It should be served in large red wine glasses at a temperature of 16°C, paired with medium-aged cheeses and all roasted or grilled red meats.
